This workshop is part of a broader programme organised by the Embassy of Brazil in London during London Climate Action Week, focused on sustainability and food security in the lead-up to COP30. The programme highlights the spirit of mutirão — a Brazilian tradition of collective action and mutual support — bringing together communities, knowledge, and practical skills to build more just and resilient food systems.
Led by Companhia dos Fermentados, a pioneering Brazilian company specialising in fermentation and food education, this hands-on session will demonstrate how everyday kitchen scraps can be transformed into nutritious, long-lasting preserves. Participants will learn practical and accessible techniques to reduce food waste, reimagine surplus ingredients, and engage with sustainable practices rooted in both tradition and innovation. Each participant will leave the workshop session with their own jar of pickled vegetables.
