About this Event
Join our Kitchen Table and experience an intimate and thoughtful dinner that brings out the taste of summer in collaboration with the wonderful Conor Spacey.
We believe eating should be a multi-sensory experience that nourishes, excites, and fulfils. Prepare to engage all your senses on a delightful journey from seed to plate, featuring more than 70 different varieties of plants, grown in our permaculture garden and local farmer markets.
Led by Josephine Marchandise and Georgia Dowling, our kitchen endeavours to redefine the concept of ‘waste’ by creatively repurposing every food scrap, integrating wild and native ingredients and ferments into our menu, and minimising energy and water usage through a closed-loop food system. These values are at the core of Conor’s work and we are excited to experience the way he envisions the garden’s produce onto the plate
What to expect:
– A wonderful array of vegetarian dishes served as three course meal
– A welcome herbal concoction on arrival
– Alcoholic and non-alcoholic drinks will be available for purchase throughout the evening.
– An opportunity to meet likeminded people in a unique shared table setting

– 7:00 PM – Dinner Commences
– 9:00 PM – Event Concludes

Please note that this meal is vegetarian and determined by our seasonal garden produce, ensuring a delightful surprise each time.

About the hosts:
Chef Conor Spacey
Conor has been involved in the food industry for over 35 years. During his years as a chef, Conor has always had a passion for local seasonal food. But that not being enough Conor has always questioned what is the future of food and how can we feed the planet sustainably. Over the last sixteen years he has deep dived into sustainability and our broken food system. What has always been the norm in professional kitchens has been turned on its head. Conor is one of the industry leaders in zero waste kitchens and other sustainable practices in the kitchen. Conor’s work has also led to collaborate the setup of the Chefs Manifesto. Conor is one of the co-authors in collaboration with the United Nations sustainable development goals to implement change and putting chefs centre to fixing a global food system.
Conor’s first book Wasted was published in July 2023 as part of the fantastic Blasta Books. And is now putting pen to paper again on his second book.
The OmVed Kitchen
The OmVed Kitchen is a place to research, learn, teach and share knowledge about sustainable culinary practices, where we transform the food harvested in the garden, connect with chefs and food experts from around the world and learn to fuel our bodies, souls and soils. The kitchen hosts food workshops, supper clubs, partnerships with organisations like the World Food Programme & Chefs Manifesto and a yearly Fermentation Celebration. The kitchen is led by Josephine Marchandise & Georgia Dowling.
