The programme highlights the spirit of mutirão — a Brazilian tradition of collective action and mutual support — bringing together communities, knowledge, and practical skills to build more just and resilient food systems.
Led by Companhia dos Fermentados, a pioneering Brazilian company specialising in fermentation and food education, this immersive session invites participants to taste and reflect on how fermentation can transform entire fruits — including peels, pulps, and seeds — into vibrant, sustainable foods. Through storytelling, live demonstrations, and a guided tasting, the session showcases fermentation as a tool to honour biodiversity, prevent waste, and expand our sensory imagination around food.
